Cloves
Intensely aromatic spice for holiday baking and mulled drinks that's your go-to for festive flavors.
What it is
Cloves are the dried flower buds of an evergreen tree native to Indonesia. They're harvested just before blooming when they turn pink, then dried until they become the dark brown, nail-shaped spice we know.
Flavor and texture
Intensely aromatic with a warm, sweet flavor that has numbing properties. The whole buds are hard and woody, releasing their oils when ground or simmered in liquid.
Best uses
Perfect for holiday baking like gingerbread and spice cookies, mulled cider and wine, rice dishes, and slow-cooked meats. Also essential in spice blends like pumpkin pie spice and Chinese five-spice.
Storage & freshness
Store in an airtight container in a cool, dry pantry away from light and heat.
| As purchased | 3-4 yearswhole cloves retain oils well |
| Sealed (pantry) | 4-5 yearsif kept airtight and cool |
| Refrigerated | 5-7 yearsextends potency slightly |
| Frozen | 7-10 yearsmaximum potency retention |
Durations are for best quality. Safe to consume longer if no spoilage signs present.
Whole cloves retain potency longer than ground cloves due to less exposed surface area.
Cooking tip
Use whole cloves sparingly in liquid-based dishes and remember to remove them before serving - they're too intense to bite into directly.
Interesting note
Cloves contain eugenol, the same compound found in dental anesthetics, which is why they've been used for centuries as a natural remedy for toothaches.
