Active Dry Yeast

Fast-acting leavening power for homemade bread and pizza dough, the baker's essential.

What it is

Active dry yeast is a living organism that's been dried into granules for long-term storage. When mixed with warm water and a bit of sugar, these dormant yeast cells wake up and begin producing carbon dioxide gas, which creates the bubbles that make bread dough rise.

How to use

Dissolve in warm water (100-110°F) with a pinch of sugar and let foam for 5-10 minutes before adding to recipes. Mix into flour-based doughs and allow time for rising - typically 1-2 hours for the first rise.

Flavor and texture

Raw yeast has a slightly nutty, earthy aroma and fine granular texture. In baked goods, it contributes a subtle tangy flavor and creates light, airy textures.

Best uses

Perfect for homemade bread, pizza dough, dinner rolls, cinnamon rolls, and any yeasted baked goods. Active dry yeast can be used to jumpstart sourdough starters, but it is not essential for traditional methods.

Storage & freshness

Store in an airtight container in the refrigerator for best results.

Durations are for best quality. Safe to consume longer if no spoilage signs present.

Test viability by proofing in warm water with sugar before use - active yeast should foam within 10 minutes.

Cooking tip

Test yeast freshness by proofing it in warm water with sugar - it should foam vigorously within 10 minutes, indicating the yeast is alive and active.

Interesting note

One packet of yeast contains billions of living yeast cells, and under ideal conditions, yeast can double its population every 90 minutes.
