Yellow Split Peas
High protein and quick-cooking for hearty soups and Indian dal, your go-to pantry staple.
What it is
Yellow split peas are mature field peas that have been dried and mechanically split in half. Unlike fresh garden peas, these are harvested when fully mature and then processed to remove the outer skin and split the pea for faster cooking.
How to cook
Rinse split peas and add to boiling water (1 cup peas to 3 cups water). Simmer covered for 30-45 minutes until they break down into a creamy consistency. No soaking required. Stir occasionally and add more water if needed.
Flavor and texture
Yellow split peas have a mild, slightly sweet, earthy flavor and cook down to a smooth, creamy texture that naturally thickens soups and stews.
Best uses
Perfect for classic split pea soup with ham or vegetables, Indian dal, thick stews, or as a protein-rich base for hearty winter soups. Also great pureed as a side dish similar to mashed potatoes.
Storage & freshness
Store in an airtight container in a cool, dry pantry.
| As purchased | 1-2 yearsin original bulk packaging |
| Sealed (pantry) | 2-3 yearsif kept airtight |
| Refrigerated | 3-4 yearsextends shelf life |
| Frozen | 5-10 yearsmaximum storage life |
Durations are for best quality. Safe to consume longer if no spoilage signs present.
Cooking tip
Add salt and acidic ingredients like tomatoes only after the peas are tender, as they can prevent proper softening during cooking.
Interesting note
Split peas are one of the oldest foods known to humanity, with archaeological evidence showing they were eaten over 10,000 years ago in the Middle East.
Cooking at Baker City elevation
At Baker City elevation (~3,400 ft), yellow split peas need 48–52 minutes instead of 38. They break down into a smooth purée when fully cooked; pull them off slightly under for soup texture, or push past for dal.
