Emmer Wheat Whole

High protein ancient grain perfect for hearty pilafs and grain bowls as your everyday wheat alternative.

What it is

Emmer wheat is an ancient variety of wheat that was one of the first grains ever cultivated by humans, dating back over 10,000 years. It's a whole grain that retains all its natural nutrients and has never been hybridized like modern wheat.

How to cook

Rinse emmer wheat and cook like rice using a 2:1 ratio of water to grain. Bring to a boil, reduce heat, and simmer covered for 45-60 minutes until tender. You can also cook it like pasta in plenty of salted boiling water, then drain.

Flavor and texture

Emmer has a rich, nutty flavor that's more complex than regular wheat, with a pleasantly chewy texture similar to farro or barley.

Best uses

Use in grain salads, pilafs, soups, and stews. It makes an excellent substitute for rice or pasta, and works beautifully in Mediterranean dishes or as a hearty breakfast porridge.

Storage & freshness

Store in an airtight container in a cool, dry pantry away from light.

Ancient grain with natural oils in the germ that can turn rancid over time — whole emmer has shorter shelf life than processed grains.

Cooking tip

Toast emmer wheat in a dry pan for 3-4 minutes before cooking to enhance its nutty flavor and improve the texture.

Interesting note

Emmer wheat was so important to ancient civilizations that it was often used as currency and was found in Egyptian tombs as food for the afterlife.

Cooking at Baker City elevation

At Baker City elevation (~3,400 ft), emmer wheat berries need 60–65 minutes of simmering instead of 52. They stay chewy when done correctly — start checking at 55 minutes and pull them when the bite is firm but not crunchy.
