Cocoa Powder
Deep chocolate flavor for brownies, cakes, and hot cocoa - your go-to baking essential.
What it is
Cocoa powder is made by pressing cocoa beans to remove most of their fat (cocoa butter), then grinding the remaining solids into a fine powder. It's the essence of chocolate in its purest form, with no added sugar or milk.
Flavor and texture
Intensely chocolatey with a slightly bitter, earthy taste and fine, powdery texture that can feel dry on its own but dissolves smoothly when mixed with liquids.
Best uses
Essential for brownies, chocolate cakes, and cookies. Mix into hot milk or coffee for rich hot chocolate, dust over desserts, or blend into smoothies for chocolate flavor without added sugar.
Storage & freshness
Store in an airtight container in a cool, dark, dry place away from heat and moisture.
| As purchased | 1-2 yearsstored properly in bulk bins |
| Sealed (pantry) | 2-3 yearsif kept airtight and dry |
| Refrigerated | 3-5 yearsif kept airtight to prevent moisture absorption |
| Frozen | 5-7 yearsindefinitely safe but quality gradually declines |
Durations are for best quality. Safe to consume longer if no spoilage signs present.
Natural cocoa powder lasts longer than Dutch-processed. Exposure to moisture causes clumping and can lead to mold.
Cooking tip
Sift cocoa powder before measuring to avoid lumps, and when making hot chocolate, make a paste with a little hot liquid first before adding the rest to prevent clumping.
Interesting note
Natural cocoa powder is acidic, while Dutch-processed cocoa is treated with alkali to neutralize the acid - they're not always interchangeable in recipes since they react differently with leavening agents.
