Chickpeas

High protein and fiber for hearty stews, crispy roasted snacks, and homemade hummus - your Mediterranean pantry essential.

What it is

Chickpeas, also called garbanzo beans, are round, beige legumes that have been cultivated in the Mediterranean and Middle East for thousands of years. They're sold dried and need to be soaked and cooked before eating.

How to cook

Soak overnight, then drain and simmer in fresh water for 1-2 hours until tender. For quicker cooking, use a pressure cooker for 15-20 minutes. Add salt only during the last 10 minutes of cooking to prevent tough skins.

Flavor and texture

Chickpeas have a mild, nutty flavor and a creamy texture when fully cooked. They hold their shape well and have a slightly grainy, satisfying bite.

Best uses

Make classic hummus, add to soups and stews, toss into salads, roast for crunchy snacks, or use in Indian curries like chana masala. They're excellent in grain bowls and Mediterranean dishes.

Storage & freshness

Store in an airtight container in a cool, dry pantry.

Cooking tip

Save the cooking liquid (aquafaba) - it can replace eggs in baking and makes excellent vegan meringue or mayonnaise.

Interesting note

Chickpeas are one of the earliest cultivated legumes, with archaeological evidence showing they were grown in Turkey over 7,000 years ago.

Cooking at Baker City elevation

Chickpeas are slow to soften even at sea level, and Baker City's ~3,400 ft elevation adds 20–30 minutes. Plan on 110–120 minutes after an overnight soak. They're done when a chickpea crushes easily between thumb and forefinger — not just bite-tender. Pressure cooking is the reliable shortcut.
